Bottled and Waiting....

My Belgian Wit is now resting comfortably in bottles after a late night bottling session. I was pretty happy as I actually hit about 5gal. of beer that was bottled. First time in I don't know how many batches that I hit my volume right.

Sample was pretty tasty, with the coriander lending a very nice spice taste, just a faint bit of orange, and a nice "tang" that I'm guessing came from the White Labs Belgian Wit Ale Yeast (WLP400).

I'm going to try my best to keep this one bottled up without tasting for the whole three weeks I have to wait before it needs to be sent in for the State Fair Comp.

Our Fair State's Legislature Got Something Right...

Despite threats to raise the tax on beer and other libations, the mass of wisdom that resides in Lansing has decided to make July "Michigan Craft Beer Month. How nice of them!!!!

Belgian Wit doing nicely

Racked my Belgian Wit, and the sample was pretty tasty. This should be a nice light beer with some great spiciness. I added some more coriander seed, and the zest of one orange cut into strips. Should be bottling this next week so it has some good conditioning time in the bottle for State Fair entry.
